Easy Chicken Noodle Soup

Chicken-Noodle-SoupOne great dish for any skill level would be chicken noodle soup. It can be a good way to get children to eat vegetables and enjoy them. I have a fine recipe that can be easily tweaked to fit your taste.

Ingredient List

  • 1/2 pound chicken breast
  • 1 tablespoon butter
  • 1/2 cup onion
  • 1/2 cup celery
  • 1 cup carrots
  • 1 1/2 cup egg noodles
  • 4-14 ounce cans chicken broth
  • 1-14 ounce can vegetable broth
  • 1/2 teaspoons dried basil
  • salt and pepper to taste


Start off with the chicken breast then chop and cook it until done. If you would like to skip that you can buy an already cooked one from your local grocery store. Rotisserie style ones substitute well. Then in a large pot combine butter, onion and  celery. Cook until tender 5 minutes or so.  Next we want to pour in the cans of chicken broth and the vegetable broth. Add cooked chicken and  egg noodles. Then add carrots along with dried basil. I personally don’t add oregano but feel free to. It reminds me of store bought can soup so I leave it out. Bring all these ingredients to a boil and then let simmer for about 25 minutes.

Let it cool and you’re ready for dinner. I have kept the vegetables simple but use your imagination. You never know what you might like.
